The myth of coconut oil and saturated fats
Once the war was over and things slowly began to return to normal, the planters were happy to be back in full production, but then something happened that changed the industry forever.
Ansel Key was America’s top public health scientist in the 1950s and was the first to establish a link between saturated fat and heart disease.
In his famous Seven Country Study, Keys showed countries with high rates of heart disease-related to high consumption of saturated fats. He hypothesized that saturated fats are converted into cholesterol, which then clogs the arteries.
Coconut oil is high in saturated fats, so replacing home-made soybean oil during the war, everyone decided that coconut oil is a heart attack in a bottle, so soybeans remain the cooking oil of choice.
The problem with Key’s research is that interrelationships do not explain causation. Key chose his hypothetical country that matched his assumptions, but many countries showed opposite results that he easily ruled out.
His work is still hotly debated today, but it was recently revealed that sugar companies paid researchers to open the link between sugar and heart disease and instead promote saturated fat as a criminal.
It is a conspiracy that the coconut oil industry never recovered, but now the situation is beginning to change, new research suggests that the oil is not only suitable for cooking, but it can potentially be used as a medicine, biofuels, cosmetics, and anti-microbial agents. !
Nutritional benefits of coconut oil
Coconut has been the staple food of many cultures for thousands of years, providing them with essential dietary fats, delicious meats, water, milk, and of course oil.
Their secret lies in their medium-chain triglyceride fatty acids (MCT fats) which are different from most oils with long-chain triglycerides. MCT fats are more easily absorbed and metabolized by the human body to an available source of energy.
Most of these MCT fats come in the form of lauric acid which helps the body absorb fat-soluble vitamins such as A, D, E, and K.
Considered one of the “good” fats, MCT fats can burn calories and promote weight loss, which is why coconut oil is widely used by bodybuilders and endurance athletes.
Organic extra virgin coconut oil helps improve digestion and absorption of nutrients, helping to relieve symptoms of inflammatory diseases such as Crohn’s, ulcerative colitis, and gastric ulcers. It has antioxidant effects to support pancreatic, kidney, liver, and thyroid function.
Other health benefits of coconut oil
Coconut oil not only helps you on the inside but also the outside!
The high lauric acid content is the reason why it is more sought after in the cosmetics industry. It is the main ingredient in many hand and face creams, lotions, and soaps.
Due to the low molecular weight and straight linear chain, the protein can get inside the hair shaft and reduce the loss of protein for both damaged and unmanaged hair.
