The myth of coconut oil and saturated fats
Once the war was over and things slowly began to return to normal, the planters were happy to be back in full production, but then something happened that changed the industry forever.
Ansel Key was America’s top public health scientist in the 1950s and was the first to establish a link between saturated fat and heart disease.
In his famous Seven Country Study, Keys showed countries with high rates of heart disease-related to high consumption of saturated fats. He hypothesized that saturated fats are converted into cholesterol, which then clogs the arteries.
Coconut oil is high in saturated fats, so replacing home-made soybean oil during the war, everyone decided that coconut oil is a heart attack in a bottle, so soybeans remain the cooking oil of choice.
The problem with Key’s research is that interrelationships do not explain causation. Key chose his hypothetical country that matched his assumptions, but many countries showed opposite results that he easily ruled out.
His work is still hotly debated today, but it was recently revealed that sugar companies paid researchers to open the link between sugar and heart disease and instead promote saturated fat as a criminal.
It is a conspiracy that the coconut oil industry never recovered, but now the situation is beginning to change, new research suggests that the oil is not only suitable for cooking, but it can potentially be used as a medicine, biofuels, cosmetics, and anti-microbial agents. !
Nutritional benefits of coconut oil
